Imitation Crab Pasta Salad



Fall is about to start and we all know it’s coming soon (sorry!), so to relieve any anxiety about any cold breezes coming my way I figured I’d share a summer pasta salad recipe. which essentially is just me being in denial.

Although I love baking, and sweets, and honestly cannot wait for spicy pumpkin season or candy cane flavoured anything, I will be honest and say that summer for me is not the time to get creative with food, I like being outside which means anything quick, easy, and fresh is the way to go. This recipe is one of those quickies that actually fill you up,

We all have our own variations on the perfect pasta salad, it’s important that you satisfy your taste buds with the ingredients that you enjoy the most. This one turned out really good! I used imitation crab but you can sub for tuna if you’d like, or real crab. I’m also very big on using the produce that’s already in our fridge before buying more (or I try to be), So here’s what I ended up:



  • 1 package imitation crab meat
  • 1 1/2 cups arugula
  • 1 tomato
  • 1/4 spanish onion
  • 1/2 cucumber
  • 3 celery stalks
  • I skipped the mushroom in the photo *didn’t feel right…*
  • 1 cup pasta (I used 2 different types)
  • 1/2 cup mayonaise
  • 3-4 tablespoons mustard
  • 3-4 tablespoons balsamic vinegar
  • Spices: Pepper, salt, ground coriander seed, ground cumin, dried basil, dried mint







  1. Cook pasta as per box instructions, drain set aside
  2. Wash and cut the tomato, onion, celery, and cucumber in small squares (because consistency is always nice), add to bowl
  3. Cut the imitation crab in small squares and add to bowl
  4. Chop the arugula
  5. In a separate bowl: mix mayonnaise, mustard, and balsamic dressing
  6. Mix in your spices, adjust to taste
  7. Bit by bit mix into chopped vegetable bowl
  8. Mix in pasta
  9. Cover and refrigerate for 2 hours or overnight before serving.
